Sandra's Garden

I want to introduce you to a friend of mine. Sandra Garrett who blogs at ConcernedTNCitizens was featured in the Johnson City Press on the Fourth of July!

Not only is Sandra fun, talkative, and an activist for peace, she cooks!

Sandra and her husband, John, live out in Stoney Creek in Carter County, TN. Sandra was a co-host for Live Earth concert celebration at the Acoustic Coffeehouse. I was pleased to participate with her when we spoke to our representative, David Davis about the Department of Peace.

But enough of that. Check out her recipes!
ELIZABETHTON — Sandra Garrett’s big yard is comfortably surrounded by the Holston Mountains, apple trees, grape vines and a vegetable garden.
That garden is producing tomatoes, corn, potatoes, zucchini, eggplant, broccoli, radishes, onions and chard, which she cans in one of her two large kitchens and turns into something exotic and unique for family and friends. She also feeds her lucky guests with produce she buys at farmer’s markets because she likes to know her food is fresh and also to be able to put a face on those who produce it.
“You can see the source of pride in people when they put their tomatoes out, or their cucumbers, and they’re arranging them lovingly,” Garrett said. “You can tell they put some care into the whole process so you feel good about what you’re eating. And frankly, with all of the things that have been going on, what we’re just now starting to realize people in China are doing to their own food and the food that they export, I’m not particularly excited about buying imported food, stuff that I can’t trace to some degree.” (Read More)
